Eating healthy can be tough, especially when you have busy schedules. I personally think that eating "healthy" sounds worst than it really is, you just have to balance your meals and eat things you like but maybe not all the time. I decided to share with you guys a couple of the dishes, snacks, and drinks that I eat during the week. I chose meals that are simple to make and very tasty, as you will notice I use peanut butter in a lot of my recipes! P.S. These recipes feed one person.
1. Fruit Bowl
- You will need five strawberries, one banana, a handful of blueberries,a half cup of papaya, granola, and yogurt of your choice(I use Greek Yogurt).
- Slice your banana, strawberries and papaya.
- Mix all the fruit in a bowl.
- Add two tablespoons of yogurt and one tablespoon of granola.
- Enjoy!!
2. Oatmeal Pancakes Topped with Peanut Butter and Banana
- You will need oatmeal I buy the Quaker brand, a cup of almond milk, one egg, peanut butter, extra-virgin oil and one banana.
- In a mixing bowl add two cups of oatmeal, a cup of almond milk, and the egg. Mix the ingredients until combined.
- Heat a skillet pan and add a teaspoon of extra-virgin oil.
- Add enough batter to make one pancake, flip when crisp, and serve when ready.
- Add a tablespoon of peanut butter on top, and slice a banana and add it on top.
- Enjoy!
3. Chicken Salad
- You will need spinach, broccoli,carrots, chicken, extra-virgin oil, avocado,a tomato, and light ranch.
- Cook a chicken breast in a skillet pan with extra-virgin oil.
- Once its cooked cut it into slices.
- Wash all of the vegetables.
- Shred a carrot. Cut the tomato into slices.
- You can either cut the avocado into slices or make it into guacamole like I did.
- Place the spinach,tomato broccoli, carrot, and chicken on a plate.
- Top it off with the avocado/guacamole, and the ranch.
- Eat Up!
4. Apples with Peanut Butter
- You will need one apple, and a table spoon of peanut butter.
- Wash the apple and cut it into thin slices.
- Place the apple on a plate, and add a tablespoon of peanut butter on the side.
- Enjoy!!
5. Peanut Butter Coconut Toast
- You will need half a banana, a tablespoon of peanut butter, shredded coconut, and a slice of wheat bread.
- Slice the banana.
- Spread a table spoon of peanut butter on a slice of bread.
- Place the sliced banana on top, and sprinkle the shredded coconut on top.
- Eat up!
6. Most Importantly!!!!! Water with lemon!!
- You will need one lemon, and water.
- Wash the lemon.
- Cut half a lemon into slices.
- Add the slices into a cup.
- Squeeze the juice of the other half into the cup.
- Fill the cup up with water.
- Drinkkk Up!!!!
